改革開放20多年來,我國的餅干業(yè)得到了穩(wěn)步而快速的發(fā)展。從1985年以來,全國已引進(jìn)數(shù)十條先進(jìn)餅干生產(chǎn)線,合資企業(yè)蓬勃涌現(xiàn),中國餅干產(chǎn)品的生產(chǎn)能力得到大幅度提高。同時,市場上酥性餅干、韌性餅干、蘇打餅干、夾心餅干、曲奇餅干及薄脆餅干等各類餅干產(chǎn)品琳瑯滿目,使餅干市場空前繁榮。
餅干是焙烤制品一個大類。屬于西點。具有悠久的歷史。進(jìn)入二十世紀(jì)后,機械化程度不斷提高,到目前為止餅干的機械化程度在所有的焙烤制食品中是最高,最成熟的。我國餅干生產(chǎn)在八十年代后期出現(xiàn)飛躍發(fā)展,通過引進(jìn)技術(shù)和設(shè)備,對技術(shù)和管理的消化吸收,機械化程度也很高。我國餅干生產(chǎn)基地最發(fā)達(dá)的地區(qū)是廣東,上海,天津等地。作為休閑食品中的主打產(chǎn)品,近幾年隨著我過人民生活水平的提高,休閑食品的市場需求逐漸增大。因此作為休閑食品的餅干也迎來了發(fā)展的黃金時期。
