[摘要] 近年來(lái),社會(huì)餐飲發(fā)展迅猛,民營(yíng)企業(yè)異軍突起,餐飲市場(chǎng)發(fā)生了很大變化,據(jù)統(tǒng)計(jì),2004年全社會(huì)餐飲營(yíng)業(yè)額達(dá)4368.9億元,比2003年增長(zhǎng)16.4%,增加額超過(guò)600億元,增幅比社會(huì)商品零售總額增長(zhǎng)高出6.3個(gè)百分點(diǎn),對(duì)擴(kuò)大內(nèi)需和促進(jìn)國(guó)民經(jīng)濟(jì)的發(fā)展起到了一定貢獻(xiàn)。因此對(duì)酒店餐飲造成很大沖擊,酒店餐飲何去何從是大家都很關(guān)心的問(wèn)題。
In recent years, the social food and beverage is developed swift and violently, the enterprise run by the local people is a dark horse, food and beverage market has greatly changed , the statistics show, the whole society food and beverage turnover up to 4368 and 900 million yuan in 2004, increased 16.4% compared with 2003. increasing is over 60 billion yuan, increasing 6.3 percentage point higher than the total volume of retail sales of the social commodities. It has certain contribution to expand domestic demand and promote the development of national economy. So it strike greatly to the food and beverage department of hotel,so what's the future of the hotel food and beverage is the question that everybody care about .
